【 Part I 】- Supply chain to align with business strategic target
A high-profile restaurant, got a splendid menu, but there is a lack of matching taste with the meat food; The vegetables look ok, again taste normal.
When the chefs’ cooking has been remaining the same over the years, there is an indication of an inappropriate supply chain behind.
As we know, for a restaurant’s business, besides environment and service, food taste is key differentiator.
If the restaurant’s strategy is to keep its high-profile stand in the market, its supply chain needs to follow.
The sources of food, storage, transportation, people’s skillset and processes, the whole chain is to be re-evaluated.
Freshness and quality level of food are critical factors to guide the decisions around the supply chain.
While cost is an important element to consider, it cannot be the dominant one, esp if it leads to results that are against the business strategy.
